  All the wine producers around the world come up aganist the problem of trading loss because of the low moisture gradient in the wine cellars. When the wines keep waiting in the cellar loss 15% of its volume in consequence of differences of the moisture gradient.

  

  The "topping-off" system which used to prevent this loss in cellers is costly both from the point of time and the labour force. The wines will be damaged both in shops or in cellars from humidity fluctuates before they been used.
